Homemade pizza

We make homemade pizza all the time, and as we have gone dairy free at home because of Tommy’s lactose intolerance, this is also vegan. This is perfect for little ones to get involved, Noah even tells me what ingredients we need next.

For the base:

  • 200g strong bread flour
  • 1 tsp of easy bake yeast
  • 1/2 tsp of sweetener
  • 120ml of warm water
  • 1 tbsp of olive oil

For the pizza sauce:

  • 50g passata
  • 1 small clove of garlic
  • A small handful of finely diced red onion
  • A small pinch of sweetener
  • 3 x large pinches of basil (we use dried)
  • Tomato puree (to thicken)

To top:

  • 50g of dairy free cheese, grated
  • Baby tomatoes thinly sliced
  • Any other toppings you choose

To start Noah helps to measure out the flour, yeast and sweetener and combines in one bowl.

Next we measure out the water in a jug and add the olive oil. We pour this mixture into the dry ingredients and stir to form a soft dough. We use a butter knife to stir as we find it’s better to mix the dough with than a spoon. Once the dough is formed we knead for 5-10 minutes and cover with a damp tea towel, we place our dough next to a radiator for at least and hour and a half.

Whilst the dough is rising we make the sauce. Noah helps to measure out the passata while I dice the onion and grate the garlic for him. He then adds these along with the basil and sweetener. Finally we add some tomato puree to thicken our sauce as we don’t like ours too runny.

We also make our own garlic and herb sauce to go with our pizza, this is still dairy free but isn’t vegan as we use mayonnaise.

For the garlic and herb sauce:

  • 1 clove of garlic
  • 30g of mayonnaise
  • 1/8 tsp of agave syrup
  • 1/8 tsp of mustard
  • 1/2 tsp white wine vinegar
  • 1/2 tsp water
  • Parsley to taste (we use dried)

Noah helps to measure out the mayonnaise while I grate the garlic, he then helps to measure out the syrup, mustard, vinegar and water. Finally we mix it all together and add parsley to taste.

Once the dough has risen we pre-heat the oven to gas mark 6 and give our dough one last knead. Next we roll out our dough quite thin. Noah likes to be quite independent when adding the pizza sauce, but I usually have to spread it out at the end to make sure it’s even. Noah then adds the cheese and any other toppings we have, I usually have to spread them out before we put it in the oven.

Finally we bake for 15 minutes, and serve with our garlic and herb sauce whilst watching a film. Pizza night is movie night!
